The Ultimate Yorkshire Pudding Recipe

Vanderveen Brown Butter YorkiesI FINALLY did it. I discovered a recipe for yorkies that is better than the package!!! And those darn packages are so expensive! They want $1.99 for what I now know amounts to flour and beef powder, and it only makes 6 tiny yorkies. Not even huge popovers like I accomplished today.

Here it is people, one of my finest discoveries yet:

Vanderveen Brown Butter Yorkies

Ingredients

This is based on 5 eggs which yielded me 12 huge yorkies.

5 Eggs

1 cup Milk

1 cup Flour

Salt to taste

1 tablespoon Liquid Beef Stock Concentrate

Giant hunk of Butter (about 1/6 of a stick)

2 tablespoons Canola Oil

Instructions

1) Preheat Oven to 415 degrees.

2) So you take the eggs and crack them

Special Reserve Spaghetti recipeThis is a series that I love to come back to. Cooking for a small army is something I do every day, but in order to save time and make future mealtimes so much easier, I love to make, like, 20 meals at a time and freeze them. This one is a Baisi (my Italian maiden name) family secret, and here I am posting it on the internet for the public. I expect to be chased out of town very soon by burly, black-haired women, brandishing a rolling pin.

Spaghetti Sauce is something everyone does, but when Clint and I do, what we call, a spaghetti cook-off, we make something so special, that it can only be called a special reserve. When all is said and done, we have at least 24 meals (1 bag feeds 4 adults or 2 adults and 4 kids) worth of sauce to freeze in Ziploc

I’ve had a few people ask me about my recipes for batch cooking lately because I mentioned that I like to do it on Facebook, so for ease of response, I’ll post some of my favourites on here. We’ll start with good old reliable shepherd’s pie.


Shepherds Pie for an armyEnough Shepherd’s Pie to Feed a Small Army (Or Just the Vanderveens)

(Makes about 10 full meals for our family of 8)

Massive3- 4 gallon Cooking pot

2 Flats of Costco Ground beef

1 package of Costco frozen Mixed Veggies

1 Package Costco Peaches and Cream Corn

6-10 Cans of Cream of Mushroom Soup

¾ of a Sack of Costco Potatoes

2 Bricks of Cream cheese

1/2 Stick of Butter

One quarter to one Half a Costco jug of mayo

Costco sea salt

Pepper

Epicure French Onion Dip mix

Extra Old

Cooking is one of my favourite things, but as we have more children running around here, I’m less able to execute the amazing dishes that I used to, as they require fresh groceries which I never have time to grab every day. Never having the exact right fresh ingredients for what I want is something that always troubles me, because I have grand ideas that I can never bring to fruition because I’m missing one measly thing that can’t be substituted. So we end up with a lot of casseroles, and meat and potato fare, which is totally fine, but there is still this little cook inside me that longs to make amazing things every once and while.

So when I stumble upon a recipe that is simply divine and requires no fresh ingredients, I think there is no one better
