Bacon Wrapped Rotisserie Chicken on the BBQ

It was a quiet Sunday afternoon, and we weren't sure what to make for dinner. We had a few veggies, a cupboard full of Costco spices, a couple pounds of bacon and a chicken. The under used rotisserie on the BBQ was calling out to us...

The result was the creation of Bacon Wrapped Rotisserie Chicken, but we like to call it "Heaven on a Stick"

Ingredients

For those of you who would rather measure then shake, here are the approximate ingredient measurements:

  • 2 lb chicken
  • 2 lbs of bacon

Chop:

  • 2 small cooking onions
  • 2 stalks of celery
  • 2 medium carrots

Combine for Rub

  • 2 tbsp paprika
  • 1 tsp salt
  • 1 tsp seasoning salt
  • 1/2 tsp black pepper

I have been asked for tips time and time again for running great projects for the Angels, and instead of typing it each time, I’m posting it here so that whenever I get asked, I can just send a link!

The Angels is a group the harnesses the power of neighbours doing small things to create a big effect for a neighbour in need. We approach each case in our given community on a project-by-project basis. Usually a report of a neighbour in need will come in to the admin of the group, and the admin will assign a project leader or team lead to handle the request.
